Preserving Peaches

Yesterday I had to take care of a case of peaches that we got from our Bountiful Basket this past weekend.  I wasn’t planning on canning, but I didn’t exactly want to freeze them all either.  I didn’t have any pectin on hand, well any that was in code and I didn’t want to chance using some out of date pectin!  So it came down to peach butter and frozen pie filling.  The rest of the peaches were just sliced, treated, and then frozen.  The peach butter took too long, and I’m sure I didn’t even cook it long enough but oh well.  I’m sure it will taste good anyway!  We ended up with two big bags of plain sliced peaches, 4 oversized pints of pie filling, and 7 half pints of peach butter.  Not bad.
