Sweet Potato Spoonbread

This is my 2nd recipe made from the Super Natural Cooking cookbook.  It was soooo good.  It would have been the perfect side dish on a cold, rainy evening.  Unfortunately it didn’t get done in time to have with dinner so it’ll have to make a repeat appearance ;)*  I probably used too big of a casserole dish.  I also didn’t realize that the cheese should have been showing on the top layer, it is all sandwiched in the middle.  The recipe called for goat cheese but I’m the only one who likes it in the house so I subbed 1/3 fat cream cheese.  Here is the recipe, go make it folks, you won’t regret it.  (The picture doesn’t do it justice, just trust me.)

*It made a reappearance last night, with grilled zucchini topped and grilled tilapia loin.  Such a good meal.
